Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together flour, baking soda, and salt in a bowl.
  3. Cream the butter with granulated and brown sugars until fluffy in another bowl.
  4. Add the egg, vanilla extract, lemon zest, and lemon juice, mixing until well combined.
  5. Gradually mix in the dry ingredients, being careful not to overmix.
  6. Fold in the chopped strawberries gently.
  7. Drop rounded tablespoons of dough onto the prepared sheets, spacing them 2 inches apart.
  8. Bake for 10-12 minutes until the edges are lightly golden.
  9. Cool on racks before serving.

Notes

Use fresh strawberries for best flavor. Adjust sugar based on desired sweetness. You can also add white chocolate chips or nuts for variation.
