A quick and easy pasta salad with just four ingredients, perfect for busy weeknights or casual get-togethers.

Ingredients

  • 1 pound Rotini Pasta (or other pasta shape)
  • 1 1/2 cups Italian Dressing (divided)
  • 1 pound Grape Tomatoes (halved)
  • 4 ounces Feta Cheese (crumbled)
  • Kosher Salt (to taste)
  • Black Pepper (to taste)

Instructions

  1. Start by boiling a large pot of salted water. Ensure the water is at a rolling boil before adding anything.
  2. Once the water is boiling, add the pasta of your choice. Cook according to the package instructions until the pasta is tender.
  3. After cooking, drain the pasta well and set it aside.
  4. In a large bowl, transfer the hot pasta and toss it with half a cup of Italian dressing.
  5. Allow the pasta to cool down a bit until it’s warm, then mix in the halved grape tomatoes and crumbled feta cheese.
  6. Pour in the remaining cup of Italian dressing and mix everything thoroughly.
  7. Finally, sprinkle with kosher salt and freshly ground black pepper to taste. Serve immediately or refrigerate until you’re ready to enjoy!

Notes

For best results, salt your pasta water, avoid adding tomatoes and cheese while the pasta is too hot, and add dressing just before serving.
